00:00:13 – kitchen and clear and one of those
00:00:15 – desserts that seemed really intimidating
00:00:17 – to make this elegant tree is actually
00:00:19 – super easy to make it home i'm going to
00:00:21 – show you guys how to make my chocolate
00:00:23 – covered coffee crown build eight players

00:00:27 – cream one inside
00:00:29 – let me show you just how easy they are
00:00:30 – to make i'm going to start things off
00:00:33 – with my dough into my soft and i'm going
00:00:35 – to add in 1 cup of water half a cup of
00:00:38 – unsalted butter and a quarter teaspoon
00:00:42 – of salt keep this mixture over
00:00:46 – medium-high heat until that butter is
00:00:48 – completely melted and once the mixture
00:00:50 – comes up to simmer add in 1 cup of
00:00:53 – all-purpose flour and stir that in once
00:01:02 – you add the flour and you want to cook
00:01:03 – the mixture for about a minute or until
00:01:06 – the delt hold together into a ball allow
00:01:10 – the cooked mixture to cool for about
00:01:11 – five to seven minutes until it's warm to
00:01:14 – touch
00:01:15 – and now it's time to be in the eggs one
00:01:17 – at a time
00:01:18 – drop one
00:01:19 – [Music]
00:01:31 – I'm going to transfer this mixture into
00:01:33 – a large pastry bag and today I'm using
00:01:35 – tip number 8 ft
00:01:37 – [Music]
00:01:41 – I've line two baking sheets with mass
00:01:44 – parts where people will also work great
00:01:46 – for this recipe now I'm just going to
00:01:48 – pipe declares onto the pans and zooms
00:02:05 – I've got my oven preheated to 425
00:02:10 – degrees Fahrenheit and declares of a
00:02:12 – first-hand minutes and then I'm going to
00:02:14 – turn the oven temperature down to 350
00:02:16 – degrees Fahrenheit make another 25 to 30
00:02:19 – minutes until the tops are golden brown
00:02:21 – then i'm going to let my it clears
00:02:23 – cool completely meanwhile let's get
00:02:25 – started on that coffee custard cream
00:02:27 – filling for my custard i'm going to
00:02:30 – place two egg yolks into a mixing bowl
00:02:32 – and add one third cup of white
00:02:34 – granulated sugar whisk together until I
00:02:38 – get a pail mixture and to think in the
00:02:45 – custard i measured out two tablespoons
00:02:47 – of cornstarch i'm going to add in two
00:02:49 – tablespoons of water mix that into a
00:02:52 – slurry then pour it into the sugar and
00:02:56 – egg yolk mixture in a saucepan i'm going
00:03:03 – to create the second half of my custard
00:03:05 – and measured out a cup and a half of
00:03:07 – milk going to pour that is and add 1
00:03:11 – tablespoon of all-purpose flour within
00:03:14 – the flower and heat this mixer until
00:03:16 – it's just the marine hot milk is now
00:03:20 – steamy hot so I'm going to slowly pour
00:03:22 – into my egg yolk and sugar mixture and
00:03:26 – whisk it after each addition
00:03:30 – my two mixtures are combined together
00:03:39 – now I'm going to pour this custard
00:03:41 – mixture back into my saucepan pick this
00:03:44 – mixture over medium-low heat for about
00:03:46 – seven to eight minutes stirring
00:03:48 – constantly and scraping along the bottom
00:03:50 – of the pan until the mixture turns
00:03:52 – enthusiastic custard and cook the
00:03:55 – custard until it reaches putting like
00:03:58 – consistency and now for my final two
00:04:01 – ingredients i have one tablespoon of
00:04:03 – kahlua liquors and 1 tablespoon of
00:04:07 – instant coffee sir that is
00:04:16 – I've transferred the coffee custard into
00:04:19 – a large bowl and now i'm going to drop
00:04:20 – some plastic wrap want to make sure that
00:04:22 – it touches the surface of the custard so
00:04:25 – that while it's cooling it doesn't form
00:04:27 – a film on the top going to set this into
00:04:29 – my fridge and let it cool completely
00:04:32 – once your players are basically when I
00:04:34 – let them cool completely on a wire rack
00:04:35 – then use a wooden dowel or filling tip
00:04:37 – like this one this is wilting tip number
00:04:39 – 230 and you're going to want to punch
00:04:41 – three holes into the bottom of each
00:04:43 – declare
00:04:44 – [Music]
00:04:52 – my coffee custard is completely cooled
00:04:55 – down and i'm going to whip it up with my
00:04:57 – hand mixers
00:04:58 – next add in a quarter cup of softened
00:05:02 – butter and i'm going to add in a
00:05:04 – tablespoon at a time mixing after each
00:05:06 – addition
00:05:11 – then transfer the custard into a pastry
00:05:16 – bag and i'm using the same wilton fit
00:05:18 – number 2 30 and then pipe each eclair
00:05:25 – full of the coffee custard want to give
00:05:27 – it a good squeeze
00:05:30 – [Music]
00:05:41 – and now for my chocolate play by have
00:05:44 – one cup of chocolate chips to that i'm
00:05:46 – going to added one third cup of hot
00:05:49 – heavy cream let that sit for a few
00:05:52 – minutes and insert until it's completely
00:05:53 – smooth then dip the top of each eclair
00:05:57 – into the chocolate and for some garnish
00:06:04 – my secret try adding some white
00:06:06 – chocolate over the top
00:06:10 – [Music]
00:06:15 – or sprinkle on some gold sprinkles
00:06:20 – they're so pretty
00:06:24 – [Music]
00:06:34 – and I definitely have to cut one of
00:06:44 – these open so you guys can see what it
00:06:46 – looks like on the inside look at that
00:06:48 – pipe all of cream you have that empty
00:06:52 – and Claire shells with that coffee cream
00:06:54 – just the way you want them to be and
00:06:56 – that's it guys to my chocolate coffee
00:06:57 – cream at Claire's once we have these all
00:07:00 – done if you're not going to serve them
00:07:01 – right away i recommend placing them
00:07:03 – until wire rack and then into the
00:07:05 – refrigerator you want to keep them
00:07:06 – refrigerated and setting them onto a
00:07:08 – wire rack will prevent any of that
00:07:10 – Custer that might seep out the bottom
00:07:12 – from making your players foggy on the
00:07:14 – outside now it's time to begin and give
00:07:17 – these a try
00:07:18 – absolutely lo how beautiful they turned
00:07:20 – out
00:07:22 – hmm now this is what I call a heavenly
00:07:27 – dessert that copy flavored custard on
00:07:28 – the inside is so good it's very rich and
00:07:31 – creamy just kind of melts into your
00:07:33 – mouth
00:07:33 – combined with a clear shell a little bit
00:07:35 – of that chocolate on the top and this is
00:07:37 – going to go so well with a cup of coffee
00:07:39 – or glass of wine after dinner if you
00:07:42 – guys are looking for super elegant and
00:07:44 – easy dessert to make it home he's got to
00:07:46 – give these eclairs a try and if you guys
